Day 24: What’s For Dinner?

My whole drive home from work today I thought, What are we going to eat for dinner? Anyone who knows me knows I am not a good cook. My husband usually does all the cooking. Once in a while I will help him out by whipping up something quick, something that could be quickly heated up and doesn’t take much preparation. I have made soups and casseroles, or I’ll throw an occasional pot roast in the Crockpot, but it doesn’t happen often. I feel like sometimes following a recipe is even difficult for me! There are times I somehow manage making a mistake even when I am reading a recipe! When I am cooking something for the first time, my husband gets so bothered by me, because I ask way too many questions. I really don’t understand how I got to be like this! My mom and both my sisters cook and enjoy it. For some reason, I just didn’t get the cooking gene. 

Today is a night my husband coaches at his Crossfit gym, so I am on my own to figure out dinner for the family. What can I quickly cook up for the kids? I think to myself while driving home. Our family eats early. If we didn’t my kids would fill up their tummies on snacks, so we learned to eat no later than 5:30PM. 

It randomly clicks in my head! Oh, I got it! I know what I’ll cook! We have tortillas, cheese, and frozen grilled chicken strips. I’ll make quesadillas! 

They were easy and fast, and the kids enjoyed them (well at 2 out of the 3 did)!

  1. I, like you, am not a good cook, and I hate the what to have for dinner conversation in my head. I feel like you captured the internal struggle quite well!

  2. As I was reading your slice, I was thinking quesadillas? I laughed out loud when I got to the quesadilla part! I do cook (not sure how much I enjoy it, honestly; it feels like a household chore to me), but on days when I don’t feel like it (once a week for sure!), we have quesadillas. Quick, easy, always good!

  3. Quesadillas are a hit in our house, too! We try to plan our meals over the weekend because I cant handle trying to decide day of- it’s like trying to pick out what to wear in the morning. It just takes me too long to decide! haha

    I had a Zoom meeting after school, so I came home to start it, and when my wife got home, she started the dinner I was craving.

    Thankfully, she can cook too!
